— Hot Gin & Cider —

A warming winter cocktail that’s just perfect for a cosy night in.

GLASS
Mug

INGREDIENTS
750ml good quality dry cider
150ml One Gin
50ml honey
2 x mulling spice bags (available from supermarkets)
Peel of 1 orange & 1 lemon (discarding the pith)
1 orange & 1 lemon sliced

METHOD
Add mulling spice bags, orange and lemon peel slices and cider to a saucepan and warm gently. Once hot, stir in honey, add One Gin and ladle into mugs to serve.

— Classic Gin Cobbler —

A refreshingly fruity long drink that’s sure to lead to repeat orders.

Highball

INGREDIENTS
30ml One Sage Gin
1/4 fresh apple, cubed
4 sprigs lemon thyme, plus more to garnish
30ml white port
15ml elderflower cordial
20ml lemon juice
10ml Earl Grey tea syrup
2 orange slices
2 lemon slices
80ml ginger ale

METHOD
In a cocktail shaker, crush up the apple with 4 sprigs of the lemon thyme (regular thyme will do if you can’t find lemon thyme). Add the remaining ingredients, except the ginger ale, shake well with fresh ice and top with ginger ale. Garnish with thyme sprigs.

A beautifully balanced floral and fruity cocktail, which we believe is best enjoyed as a refreshing after dinner treat.

Champagne flute

INGREDIENTS
15ml One Sage & Apple Gin infused with lemon verbena (1g per 100ml of gin)
60ml Waldon Mead
60ml Kombucha
1 Scoop rosehip sorbet*
Rose petal garnish

METHOD
Build in a champagne flute and garnish with a rose petal.

* Purchase online, or to make rosehip sorbet at home: mix 300g of rosehip puree with 50g caster sugar, 300ml rosehip tea and the juice of 2 lemons. Heat all gently until homogenous then pass through a fine sieve and cool. Add to an ice cream machine and churn until sorbet consistency is achieved. If no ice cream maker is available, simply freeze in Tupperware, breaking up and churning every hour until desired consistency is achieved.

This distinctively elegant, fruity and flavoursome cocktail is perfect for sipping pre-dinner.

INGREDIENTS
40ml One Sage & Apple Gin
25ml Ruby Port
25ml Plum saké
10ml Berry cordial
10ml Honey syrup
10ml Verjus
1 Sprig of thyme
1 edible flower for garnish
Beetroot powder and icing sugar for dusting

METHOD
Add the first seven ingredients to a cocktail shaker with fresh ice and shake well. Double strain the mixture into a chilled cocktail glass, dust the glass with the beetroot powder and icing sugar and garnish with an edible flower.

— Marmalade Cocktail —

A delightfully tangy cocktail that proves popular when served at a lazy Boxing Day brunch.

Martini or coupette

INGREDIENTS 
50ml One Sage & Apple Gin
25ml Lemon juice
1 heaped teaspoon of orange marmalade
Orange twist for garnish

METHOD
Add all of the ingredients into a cocktail shaker with fresh ice and shake well. Double strain into the glass and garnish with an orange twist.
