An all-in-one cake that even the most hapless baker could nail. With a fantastically earthy combination of rich cherries and warm almonds, this sponge cake is perfect served hot with custard, ice cream or cream, or cold with a cuppa!
To make an 8inch cake you’ll need:
- 175 g Fresh Cherries (Weight after stones removed)
- 115 g Butter (Softened)
- 115 g Self-raising flour
- 115 g Caster Sugar
- 1/2 tsp Baking Powder
- 40g Almonds (ground)
- 40g Almonds (flaked)
- Icing sugar to dust
MIX IT UP A LITTLE…
Instead of the cherries you could use fresh raspberries, blackberries or blueberries; dried apricots or cranberries, or even sliced apple or pear.
