Fragrant Chicken Noodle Soup

Full of goodness and packed with flavour. This gently spiced soup is filling without being calorific – under 380 calories per portion. If you wanted to make it ‘clean’ simply drop the noodles.

For four portions you’ll need:

  • 1.4 litres Chicken stock
  • 2 Lemongrass stalks (finely chopped)
  • 2 tsp Ginger (finely chopped)
  • 1 Red Chilli (deseeded & finely chopped)
  • 2 Garlic cloves (finely chopped)
  • 400g Chicken thigh or breast (in strips)
  • 150g fresh Noodles
  • 175g Baby Sweetcorn (sliced diagonally)
  • 150g Button Mushrooms (sliced)
  • 1 tbsp Light Soy Sauce
  • 400ml Coconut milk
  • 1 Lime (juice & grated zest)
  • 200g Pak Choi (sliced)

Optional to garnish:

  • Spring onions (finely shopped)
  • Coriander Leaves (shredded)
