Full of goodness and packed with flavour. This gently spiced soup is filling without being calorific – under 380 calories per portion. If you wanted to make it ‘clean’ simply drop the noodles.
For four portions you’ll need:
- 1.4 litres Chicken stock
- 2 Lemongrass stalks (finely chopped)
- 2 tsp Ginger (finely chopped)
- 1 Red Chilli (deseeded & finely chopped)
- 2 Garlic cloves (finely chopped)
- 400g Chicken thigh or breast (in strips)
- 150g fresh Noodles
- 175g Baby Sweetcorn (sliced diagonally)
- 150g Button Mushrooms (sliced)
- 1 tbsp Light Soy Sauce
- 400ml Coconut milk
- 1 Lime (juice & grated zest)
- 200g Pak Choi (sliced)
Optional to garnish:
- Spring onions (finely shopped)
- Coriander Leaves (shredded)
